  • 1 can mandarin oranges (approx. 15 oz), drained, or 4 fresh mandarins, peeled and sectioned
  • 1/4 cup red onion, thinly sliced
  • ½ cup goat cheese crumbles
  • ½ cup sliced almonds
  • ½ cup dried cranberries
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 12 tablespoons honey
  • 2 teaspoons Dijon mustard
  • Sea salt and pepper to taste

Instructions

  • Preheat oven to 350°F and toast the sliced almonds for 4-6 minutes.
  • In a large bowl, combine spinach, mandarin oranges, red onion, goat cheese, toasted almonds, and dried cranberries.
  • In a separate bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, sea salt, and pepper.
  • Drizzle dressing over the salad just before serving and toss gently.
