- 10 oz baby spinach
- 1 can mandarin oranges (approx. 15 oz), drained, or 4 fresh mandarins, peeled and sectioned
- 1/4 cup red onion, thinly sliced
- ½ cup goat cheese crumbles
- ½ cup sliced almonds
- ½ cup dried cranberries
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1–2 tablespoons honey
- 2 teaspoons Dijon mustard
- Sea salt and pepper to taste
Instructions
- Preheat oven to 350°F and toast the sliced almonds for 4-6 minutes.
- In a large bowl, combine spinach, mandarin oranges, red onion, goat cheese, toasted almonds, and dried cranberries.
- In a separate bowl, whisk together olive oil, balsamic vinegar, honey, Dijon mustard, sea salt, and pepper.
- Drizzle dressing over the salad just before serving and toss gently.
Notes
Ensure fresh spinach and ripe mandarins for best flavor.
Adjust honey and Dijon in the dressing based on your taste.
Salad can easily be scaled for more servings.
