Scale
- 65 grams active sourdough starter
- 300 grams lukewarm water
- 12 grams salt (about 2 teaspoons)
- 14 grams sugar
- 15 grams oil (avocado or olive)
- 400 grams bread flour
- 100 grams all-purpose flour
Instructions
- Activate the sourdough starter by feeding it 4-8 hours before starting.
- Mix lukewarm water and activated sourdough starter in a bowl.
- Combine dry ingredients in another bowl, then mix into the wet ingredients until no dry flour is visible.
- Cover the bowl and let it rest for one hour.
- Allow the dough to rise until it doubles in size (8-10 hours).
- Gently shape the dough into a rectangle and let it rest for 10 minutes.
- Lightly oil a bread pan and place the shaped dough inside.
- Let it rise until at least one inch above the pan rim (2-4 hours).
- Preheat the oven to 400°F and bake for about 40 minutes.
- Cool in the pan for 5 minutes before transferring to a cooling rack.
Notes
Ensure the sourdough starter is bubbly for best results.
Monitor the dough visually rather than strictly by time.
