- 4 boneless pork chops
- 1 teaspoon olive oil
- 12 oz cream of chicken soup
- 8 oz chicken stock
- 3 medium potatoes, peeled and chopped
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried parsley
- 1 teaspoon granulated onion
- 1/2 teaspoon granulated garlic
- 1/4 teaspoon celery seed
- Salt and pepper, to taste
- Optional: Cornstarch for thickening
- Optional: Sliced carrots and celery for added flavor and veggies
Instructions
- Heat olive oil in a skillet over medium-high heat.
- Season pork chops with salt and pepper, and sear for 3-4 minutes on each side.
- Chop potatoes and place them in the slow cooker.
- Mix cream of chicken soup and chicken stock; pour over potatoes.
- Add thyme, parsley, onion, garlic, celery seed, salt, and pepper.
- Place seared pork chops on top of the potato mixture.
- Cover and set slow cooker on high for 3-4 hours or low for 6-8 hours.
- Optional: Thicken sauce with cornstarch and liquid mixture before serving.
Notes
Use fresh ingredients for better flavor.
Adjust cooking time for thicker pork chops.
