Slow Cooker Corned Beef and Cabbage

  • 4 cups low sodium beef broth
  • 2 bay leaves
  • 1 lb. baby carrots
  • 2 lbs. baby potatoes (red and gold)
  • ½ head cabbage, chopped

Instructions

  • Rinse the corned beef under cold water to remove excess salt.
  • Place corned beef in the slow cooker and pour in the beef broth.
  • Add bay leaves for additional flavor.
  • Cover and cook on LOW for 5 hours.
  • Add baby potatoes and carrots around the brisket and cook for an additional 3 hours on LOW.
  • Top with chopped cabbage and cook for 30 more minutes.
  • Remove vegetables and let corned beef rest for 5 minutes before slicing.

Notes

Set the slow cooker to LOW for best results.
Slice the corned beef against the grain for tender slices.
