Ingredients

- 3 to 4 lbs. corned beef with seasoning packet
- 4 cups low sodium beef broth
- 2 bay leaves
- 1 lb. baby carrots
- 2 lbs. baby potatoes (red and gold)
- ½ head cabbage, chopped
Instructions
- Rinse the corned beef under cold water to remove excess salt.
- Place corned beef in the slow cooker and pour in the beef broth.
- Add bay leaves for additional flavor.
- Cover and cook on LOW for 5 hours.
- Add baby potatoes and carrots around the brisket and cook for an additional 3 hours on LOW.
- Top with chopped cabbage and cook for 30 more minutes.
- Remove vegetables and let corned beef rest for 5 minutes before slicing.
Notes
Set the slow cooker to LOW for best results.
Slice the corned beef against the grain for tender slices.
Feel free to customize vegetables based on preference.
