- 1 pound raw shrimp, peeled and deveined
- ¾ cup panko breadcrumbs
- ¼ cup red bell pepper, finely diced
- 3 tablespoons chives, sliced (plus more for garnish)
- ½ teaspoon salt
- ¼ teaspoon pepper
- 2 large eggs
- 1 teaspoon lemon zest
- 4 tablespoons olive oil
Instructions
- Pulse shrimp in a food processor until coarsely chopped.
- Combine shrimp with panko, red bell pepper, chives, salt, pepper, eggs, and lemon zest in a bowl.
- Shape mixture into patties.
- Heat olive oil in a skillet and cook patties until golden brown on each side.
- Serve hot, garnished with extra chives and lemon wedges.
Notes
Pat shrimp dry before processing for better texture.
Chill patties for 15 minutes to make handling easier.
Use a non-stick skillet to prevent sticking.
