  • ¼ teaspoon pepper
  • 2 large eggs
  • 1 teaspoon lemon zest
  • 4 tablespoons olive oil

Instructions

  • Pulse shrimp in a food processor until coarsely chopped.
  • Combine shrimp with panko, red bell pepper, chives, salt, pepper, eggs, and lemon zest in a bowl.
  • Shape mixture into patties.
  • Heat olive oil in a skillet and cook patties until golden brown on each side.
  • Serve hot, garnished with extra chives and lemon wedges.

Notes

Pat shrimp dry before processing for better texture.
Chill patties for 15 minutes to make handling easier.
Use a non-stick skillet to prevent sticking.
