- 1 1/2 pounds fully cooked smoked sausage (13.5–14 oz)
- 1 pound baby creamer potatoes (a mixture of red and white)
- 2 (15 oz) cans green beans, drained
- ½ onion, roughly chopped
- 6 garlic cloves, minced
- 2 tablespoons olive oil
- 1 tablespoon Italian seasoning
- 1 1/2 teaspoons salt (more to taste)
- 1 teaspoon black pepper
- ½ teaspoon red pepper flakes
- Fresh chopped parsley for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Slice the smoked sausage into ¼-inch thick pieces and halve the baby potatoes.
- Combine sausage, potatoes, green beans, onions, garlic, olive oil, Italian seasoning, salt, black pepper, and red pepper flakes in a bowl.
- Prepare a 9×13 baking dish with non-stick spray and pour in the mixture, spreading it evenly.
- Bake for 40-45 minutes, stirring halfway through, until potatoes are tender.
- Adjust seasoning if necessary and garnish with fresh parsley before serving.
Notes
Cut potatoes into similar sizes for even cooking.
Adjust red pepper flakes to your spice preference.
Leftovers can be reheated in the oven to maintain texture.
