  • 1 pound baby creamer potatoes (a mixture of red and white)
  • 2 (15 oz) cans green beans, drained
  • ½ onion, roughly chopped
  • 6 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • 1 1/2 teaspoons salt (more to taste)
  • 1 teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • Fresh chopped parsley for garnish

Instructions

  • Preheat the oven to 425°F (220°C).
  • Slice the smoked sausage into ¼-inch thick pieces and halve the baby potatoes.
  • Combine sausage, potatoes, green beans, onions, garlic, olive oil, Italian seasoning, salt, black pepper, and red pepper flakes in a bowl.
  • Prepare a 9×13 baking dish with non-stick spray and pour in the mixture, spreading it evenly.
  • Bake for 40-45 minutes, stirring halfway through, until potatoes are tender.
  • Adjust seasoning if necessary and garnish with fresh parsley before serving.
