- 1 pound ground beef
- 1 cup diced onion
- 1 packet taco seasoning (or 3 tablespoons homemade)
- 1 (4-ounce) can green chiles
- 1 (15.5-ounce) can black beans (drained and rinsed)
- 1 1/2 cups frozen corn
- 1 1/2 cups red enchilada sauce
- 1 cup thick salsa
- 3 cups shredded cheese (divided)
- 4 cups frozen tater tots
Instructions
- Preheat oven to 375°F and prepare a baking dish.
- Cook ground beef and diced onion in a skillet until browned.
- Add taco seasoning, green chiles, black beans, corn, salsa, and enchilada sauce; mix well.
- Incorporate 2 cups of shredded cheese until melted.
- Spread mixture in baking dish and top with tater tots.
- Bake for 35-40 minutes until tater tots are golden brown.
- Add remaining cheese on top of tater tots and bake for an additional 5 minutes.
- Serve with your favorite taco toppings.
Notes
Substitute ground beef with turkey or a meat alternative for a lighter dish.
Add bell peppers or jalapeños for extra spice.
Assemble ahead of time and refrigerate before baking.
