  • 1 (15.5-ounce) can black beans (drained and rinsed)
  • 1 1/2 cups frozen corn
  • 1 1/2 cups red enchilada sauce
  • 1 cup thick salsa
  • 3 cups shredded cheese (divided)
  • 4 cups frozen tater tots

Instructions

  • Preheat oven to 375°F and prepare a baking dish.
  • Cook ground beef and diced onion in a skillet until browned.
  • Add taco seasoning, green chiles, black beans, corn, salsa, and enchilada sauce; mix well.
  • Incorporate 2 cups of shredded cheese until melted.
  • Spread mixture in baking dish and top with tater tots.
  • Bake for 35-40 minutes until tater tots are golden brown.
  • Add remaining cheese on top of tater tots and bake for an additional 5 minutes.
  • Serve with your favorite taco toppings.
