  • 3 green onions, chopped (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Heat vegetable oil in a large skillet over medium heat.
  • Sauté finely diced onion, bell pepper, and celery until softened.
  • Add minced garlic and cook for another minute.
  • Add ground turkey or chicken, and optional chicken livers, breaking it up.
  • Sprinkle in Cajun seasoning, dried thyme, smoked paprika, and cayenne pepper.
  • Cook until meat is browned, about 8-10 minutes.
  • Stir in long-grain rice until well-coated.
  • Pour in chicken broth, bring to a boil, then reduce heat and cover.
  • Let simmer for 20-25 minutes until rice absorbs broth.
  • Remove from heat and let sit for 5 minutes, then fluff with a fork.
  • Season to taste, and garnish with green onions and fresh parsley.

Notes
