- 3/4 cup (170g) unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 (14 oz) can sweetened condensed milk
- 1 tablespoon lemon zest
- 1/3 cup (80ml) fresh lemon juice
- 2 large egg yolks
- 1/2 teaspoon lemon extract
Instructions
- Whisk together flour, oats, salt, and baking soda in a bowl.
- Stir in granulated and brown sugar. Add melted butter and vanilla, mixing until combined.
- Press half of the mixture into a greased 8×8-inch baking dish.
- Bake the crust at 350°F for 15 minutes.
- Whisk together sweetened condensed milk, lemon zest, lemon juice, egg yolks, and lemon extract.
- Pour the lemon filling over the baked crust.
- Sprinkle with the remaining crumb mixture.
- Bake for 23-26 minutes until the topping is lightly golden.
- Cool at room temperature, then refrigerate for 30 minutes to 1 hour before serving.
Notes
Use fresh lemon juice for the best flavor.
Chilling the bars enhances the filling’s texture.
