  • 3/4 cup (170g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 (14 oz) can sweetened condensed milk
  • 1 tablespoon lemon zest
  • 1/3 cup (80ml) fresh lemon juice
  • 2 large egg yolks
  • 1/2 teaspoon lemon extract

Instructions

  • Whisk together flour, oats, salt, and baking soda in a bowl.
  • Stir in granulated and brown sugar. Add melted butter and vanilla, mixing until combined.
  • Press half of the mixture into a greased 8×8-inch baking dish.
  • Bake the crust at 350°F for 15 minutes.
  • Whisk together sweetened condensed milk, lemon zest, lemon juice, egg yolks, and lemon extract.
  • Pour the lemon filling over the baked crust.
  • Sprinkle with the remaining crumb mixture.
  • Bake for 23-26 minutes until the topping is lightly golden.
  • Cool at room temperature, then refrigerate for 30 minutes to 1 hour before serving.
