Instructions
- Cream butter and granulated sugar until light and fluffy.
- Add egg and powdered sugar, mixing well; incorporate vegetable oil.
- Whisk flour, baking soda, and cream of tartar; gradually add to wet mixture.
- Mix in lemon juice, lemon zest, and vanilla; fold in blueberries.
- Scoop dough onto a greased baking sheet, spacing them 2 inches apart.
- Bake at 350°F for 7-9 minutes until edges are golden.
- Cool on the baking sheet briefly before transferring to a wire rack.
- Prepare glaze with powdered sugar, butter, lemon juice, and zest; drizzle over cooled cookies.
