- 1/3 cup unsalted butter, melted
- 1 cup granulated sugar
- 1/4 cup lemon juice

- 1/2 cup milk
- 2 tablespoons lemon zest
- 1 cup fresh blueberries
- 1 cup powdered sugar
- 1 1/2 tablespoons lemon juice (for glaze)
- 1/2 tablespoon milk (for glaze, or more as needed)
Instructions
- Prepare the glaze by mixing powdered sugar, lemon juice, and milk until smooth.
- Preheat the oven to 350°F and grease a loaf pan.
- Whisk together flour, baking powder, and salt in a bowl.
- In another bowl, combine melted butter, sugar, lemon juice, eggs, and vanilla until smooth.
- Alternate mixing dry ingredients with milk into the wet mixture until just combined.
- Fold in lemon zest and blueberries gently.
- Pour into the prepared loaf pan and bake for about 60 minutes.
- Cool in the pan for 30 minutes before transferring to a wire rack.
- Drizzle with glaze once cool.
Notes
Use fresh blueberries for the best flavor, and if using frozen, add them still frozen.
Melted butter should be warm, not hot to prevent cooking the eggs.
Extra lemon zest can be added for more flavor.
