Instructions
- Let lamb chops sit at room temperature for 20 minutes.
- Preheat oven to 400°F (200°C).
- Drizzle olive oil on lamb chops and season with salt, black pepper, garlic powder, and thyme.
- Heat 1 tablespoon of olive oil in an oven-safe skillet and sear lamb chops for 2-3 minutes on each side.
- Transfer skillet to the oven and cook lamb chops for 10-22 minutes, based on desired doneness.
- Allow lamb chops to rest in the pan for 5 minutes before serving.
