- 2 lbs. carrots, peeled and sliced diagonally
- 2 Tbsp olive oil
- 1/2 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp dried thyme
- 1/4 tsp paprika
- 1/4 tsp garlic powder (or 2 cloves minced garlic)
- 4 Tbsp butter, sliced into tablespoon-sized pieces
- 2 – 3 Tbsp honey
Instructions
- Preheat the oven to 425°F (220°C).
- Slice the peeled carrots diagonally.
- In a bowl, mix carrots with olive oil, salt, pepper, thyme, paprika, and garlic powder.
- Spread the seasoned carrots on a baking sheet and roast for 15 minutes.
- Flip the carrots and roast for an additional 10-15 minutes until tender and caramelized.
- In a saucepan, melt butter over medium-low heat, whisking until browned.
- Remove from heat and combine with honey.
- Toss roasted carrots with the honey-butter sauce.
Notes
Choose fresh, firm carrots for the best flavor.
Spread the carrots evenly on the baking sheet to prevent steaming.
Monitor the butter closely when browning to avoid burning.
