  • 3 tablespoons (38g) granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 5 tablespoons (71g) unsalted butter, cold and cubed
  • Optional: 1 cup (150g) raisins

Instructions

  • Preheat your oven to 400°F (204°C).
  • Whisk together buttermilk and egg (if using) and set aside.
  • In a large bowl, combine flour, sugar, baking soda, and salt.
  • Cut in cold butter until the mixture resembles small crumbs.
  • Pour the buttermilk mixture into the dry ingredients and fold until a dough forms.
  • Transfer dough to a floured surface, shape into a ball, and knead gently.
  • Score the top of the dough with a shallow cut or an 'X'.
  • Bake in the preheated oven for 45-55 minutes until golden brown.
  • Cool for 10 minutes before transferring to a wire rack.
