Ingredients

  • ½ cup flour
  • ¼ cup butter
  • 2 eggs
  • 3 cups seasoned bread crumbs
  • Salt & pepper to taste
  • Vegetable oil (for frying)

Instructions

  • Boil macaroni until tender, about 8-10 minutes, then drain.
  • Melt butter in a pan, add flour, and stir to create a roux.
  • Whisk in 1 cup of milk until thickened, then gradually add cheese until melted.
  • Fold in cooked macaroni and season with salt and pepper.
  • Chill the mixture for at least 1 hour.
  • Shape into 1-inch balls and freeze for at least 1 hour.
  • Prepare egg wash with eggs and remaining milk.
  • Dip bites in egg wash and coat with breadcrumbs.
  • Heat oil to 320°F (160°C) and fry bites until golden brown, about 3-4 minutes.
