- 1 lb macaroni
- 16 oz sharp cheddar cheese (block or shredded)
- 1 ¼ cup milk
- ½ cup flour
- ¼ cup butter
- 2 eggs
- 3 cups seasoned bread crumbs
- Salt & pepper to taste
- Vegetable oil (for frying)
Instructions
- Boil macaroni until tender, about 8-10 minutes, then drain.
- Melt butter in a pan, add flour, and stir to create a roux.
- Whisk in 1 cup of milk until thickened, then gradually add cheese until melted.
- Fold in cooked macaroni and season with salt and pepper.
- Chill the mixture for at least 1 hour.
- Shape into 1-inch balls and freeze for at least 1 hour.
- Prepare egg wash with eggs and remaining milk.
- Dip bites in egg wash and coat with breadcrumbs.
- Heat oil to 320°F (160°C) and fry bites until golden brown, about 3-4 minutes.
Notes
Ensure the cheese mixture is adequately chilled to maintain shape during frying.
Experiment with different types of cheese for unique flavors.
