- 1 cup whole milk, warmed to 100-110°F
- 1/4 cup honey
- 2 teaspoons active dry yeast
- 4 tablespoons butter, melted
- 1 large egg
- 1 egg yolk (no white)
- 1 teaspoon kosher salt
- 3 3/4 cups bread flour
- For Assembling Bunnies
- 1 egg, beaten with a splash of water
- 1 tablespoon mini white nonpareils
- 4 tablespoons butter, melted
- 2 tablespoons honey
- 2 tablespoons powdered sugar
- 1 teaspoon heavy cream
Instructions
- Whisk warm milk and honey in a stand mixer bowl. Sprinkle yeast and let foam for 5 minutes.
- Add melted butter, whole egg, egg yolk, and salt. Whisk until combined.
- Add 3 cups bread flour and mix on low speed. Gradually mix in remaining flour until a ball forms.
- Knead dough on low speed for 2-3 minutes. Transfer to an oiled bowl and cover. Let rise until doubled, about 1.5 hours.
- Preheat oven to 350°F. Punch down dough and transfer to a floured board.
- Divide dough into 12 pieces, create shapes for bunnies using body, head, and tail.
- Roll ears and assemble the bunnies on a baking tray.
- Brush with egg wash and sprinkle tails with nonpareils.
- Bake for 20-23 minutes until golden brown.
- Whisk together melted butter and honey for glaze. Mix powdered sugar and heavy cream for frosting. Brush rolls with honey butter and decorate.
Notes
Check the milk temperature to activate the yeast effectively.
Space the bunnies on the baking tray for even rising and baking.
Cool completely before decorating to keep the frosting from melting.
