- ¾ cup whole milk (180ml)
- ½ cup cold water (120ml)
- 2 large eggs (room temperature)
- 3 tablespoons unsalted butter (melted + more for brushing)
- 1 tablespoon granulated sugar
- ½ teaspoon grated orange zest
- ⅛ teaspoon salt
- 1 cup all-purpose flour (120g)
- 2 teaspoons grated orange zest
- ¾ cup fresh orange juice (about 2 oranges, 180ml)
- ½ cup unsalted butter (113g)
- ½ cup granulated sugar (100g)
- ⅓ cup orange liqueur (80ml)
Instructions
- Blend milk, water, eggs, melted butter, sugar, orange zest, and salt until smooth.
- Gradually add flour to the blender while blending on medium speed until just combined.
- Let the batter rest for around 20 minutes.
- In a skillet, heat orange zest, orange juice, butter, and sugar until boiling.
- Lower heat, add orange liqueur, and simmer until thick.
- Brush a pan with melted butter and cook crepes until golden brown on each side.
- Combine cooked crepes with the warm orange sauce and heat gently.
- Serve crepes topped with additional sauce and optional ice cream.
Notes
Make sure the pan is adequately heated to avoid burning.
Letting the batter rest helps achieve lighter crepes.
