  • 2 cups all-purpose flour
  • 1 ½ cups small marshmallows
  • ½ cup butter or margarine
  • ½ cup vegetable oil
  • 3 tablespoons cocoa powder
  • 1 cup Coca Cola®
  • 1 teaspoon baking soda
  • ½ cup buttermilk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ½ cup butter
  • 3 tablespoons cocoa powder
  • 6 tablespoons Coca Cola®
  • 1 box (16 oz) confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Instructions

  • Preheat the oven to 350°F (175°C).
  • Sift together sugar and flour, then fold in marshmallows.
  • Combine butter, vegetable oil, cocoa powder, and Coca Cola® in a saucepan; bring to a boil, then pour over dry ingredients.
  • Dissolve baking soda in buttermilk, add to batter with eggs and vanilla extract; mix well.
  • Pour the batter into a greased 9-by-13-inch pan. Bake for 35-45 minutes until a toothpick comes out clean.
  • For frosting, mix butter, cocoa powder, and Coca Cola®; bring to boil and pour over confectioners’ sugar.
  • Add vanilla extract and pecans; stir and spread over the hot cake.
  • Let the cake cool before slicing.

Notes

Use room temperature ingredients for better mixing.
Don’t overbake to maintain moistness.
Cool completely before cutting for neat slices.
