- 2 cups sugar
- 2 cups all-purpose flour
- 1 ½ cups small marshmallows
- ½ cup butter or margarine
- ½ cup vegetable oil
- 3 tablespoons cocoa powder
- 1 cup Coca Cola®
- 1 teaspoon baking soda
- ½ cup buttermilk
- 2 eggs
- 1 teaspoon vanilla extract
- ½ cup butter
- 3 tablespoons cocoa powder
- 6 tablespoons Coca Cola®
- 1 box (16 oz) confectioners’ sugar
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
Instructions
- Preheat the oven to 350°F (175°C).
- Sift together sugar and flour, then fold in marshmallows.
- Combine butter, vegetable oil, cocoa powder, and Coca Cola® in a saucepan; bring to a boil, then pour over dry ingredients.
- Dissolve baking soda in buttermilk, add to batter with eggs and vanilla extract; mix well.
- Pour the batter into a greased 9-by-13-inch pan. Bake for 35-45 minutes until a toothpick comes out clean.
- For frosting, mix butter, cocoa powder, and Coca Cola®; bring to boil and pour over confectioners’ sugar.
- Add vanilla extract and pecans; stir and spread over the hot cake.
- Let the cake cool before slicing.
Notes
Use room temperature ingredients for better mixing.
Don’t overbake to maintain moistness.
Cool completely before cutting for neat slices.
