  • Yield: 1 loaf 1x

Ingredients

Scale
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 34 medium ripe bananas (or 2 large bananas)
  • 1 teaspoon vanilla extract

Instructions

  • Preheat oven to 350°F (175°C) and prepare two 8×4 inch bread pans.
  • Mash ripe bananas in a medium bowl until smooth with some bits.
  • Cream butter and sugar together until light and fluffy.
  • Add eggs one at a time to the butter-sugar mixture, mixing well.
  • Whisk together flour, baking soda, and salt. Gradually combine with wet ingredients.
  • Fold in mashed bananas and vanilla until evenly mixed.
  • Pour batter into prepared pans and bake for 35-40 minutes.
  • Cool in pans for 5-10 minutes, then transfer to a wire rack to cool completely.

Notes

Use overly ripe bananas for the best flavor.
Ensure butter and eggs are at room temperature for better mixing.
Do not overmix the batter to maintain a tender texture.
