Instructions
- Preheat oven to 350°F (175°C) and prepare muffin pan with liners.
- Mix granulated sugar, vegetable oil, salt, mashed bananas, and egg in a large bowl.
- Add milk and vanilla extract, mixing until combined.
- Sprinkle in baking soda, baking powder, and flour; mix until just combined.
- Gently fold in blueberries.
- Spoon batter into muffin cups, filling each about ¾ full.
- Bake for 20-30 minutes until golden brown and a toothpick comes out clean.
- Cool in pan briefly, then transfer to a wire rack.
Notes
Use overripe bananas for enhanced sweetness.
Avoid over-mixing the batter to keep muffins light.
