  • 2 medium overripe bananas, mashed
  • 1 large egg
  • ¼ cup (59ml) milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 ½ cups (186g) all-purpose flour
  • 1 cup fresh or frozen blueberries

Instructions

  • Preheat oven to 350°F (175°C) and prepare muffin pan with liners.
  • Mix granulated sugar, vegetable oil, salt, mashed bananas, and egg in a large bowl.
  • Add milk and vanilla extract, mixing until combined.
  • Sprinkle in baking soda, baking powder, and flour; mix until just combined.
  • Gently fold in blueberries.
  • Spoon batter into muffin cups, filling each about ¾ full.
  • Bake for 20-30 minutes until golden brown and a toothpick comes out clean.
  • Cool in pan briefly, then transfer to a wire rack.

Notes

Use overripe bananas for enhanced sweetness.
