- 3 boneless, skinless chicken breasts (about 1½ to 2 pounds)
- 1 small yellow onion (finely diced)
- ½ teaspoon kosher salt
- 1 cup apricot preserves
- ½ cup no-pulp orange juice
- 2 cloves garlic (minced)
- 2 tablespoons honey BBQ sauce
- 2 tablespoons reduced-sodium soy sauce
- 1 tablespoon honey
- 1 tablespoon cornstarch
- 1 tablespoon cold water
Instructions
- Cut chicken breasts into small, bite-sized pieces.
- Heat oil in a skillet over medium-high heat.
- Add chicken, onion, and salt; cook until chicken is mostly white.
- Mix apricot preserves, orange juice, garlic, BBQ sauce, soy sauce, and honey in a bowl.
- Pour sauce into skillet; bring to boil, then simmer for 5-8 minutes.
- Combine cornstarch and cold water; add to skillet to thicken sauce, simmer for another minute.
- Serve over cooked rice; garnish if desired.
Notes
Ensure chicken is cooked thoroughly for safety and flavor.
Adjust the amount of honey for preferred sweetness.
