  • 1 cup apricot preserves
  • ½ cup no-pulp orange juice
  • 2 cloves garlic (minced)
  • 2 tablespoons honey BBQ sauce
  • 2 tablespoons reduced-sodium soy sauce
  • 1 tablespoon honey
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water

Instructions

  • Cut chicken breasts into small, bite-sized pieces.
  • Heat oil in a skillet over medium-high heat.
  • Add chicken, onion, and salt; cook until chicken is mostly white.
  • Mix apricot preserves, orange juice, garlic, BBQ sauce, soy sauce, and honey in a bowl.
  • Pour sauce into skillet; bring to boil, then simmer for 5-8 minutes.
  • Combine cornstarch and cold water; add to skillet to thicken sauce, simmer for another minute.
  • Serve over cooked rice; garnish if desired.
