Ingredients

  • 2 tablespoons olive oil, divided
  • 4 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped green onions or scallions
  • Ranch dressing for drizzling
  • 1/2 teaspoon chives (dried or fresh)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried dill
  • Salt and pepper to taste

Instructions

  • Scrub and clean the potatoes, then rub with olive oil.
  • Air fry the potatoes at 400°F for 35-45 minutes until soft.
  • Cool the potatoes for 20-30 minutes and slice in half lengthwise.
  • Scoop out the inner flesh, leaving 1/4 inch along the sides.
  • Drizzle or spray the insides with olive oil and season.
  • Top with crumbled bacon and shredded cheddar cheese.
  • Air fry again at 350°F for 6-10 minutes until cheese is melted.
  • Garnish with green onions and drizzle ranch dressing before serving.
