- 3 russet potatoes
- 2 tablespoons olive oil, divided
- 4 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 2 tablespoons chopped green onions or scallions
- Ranch dressing for drizzling
- 1/2 teaspoon chives (dried or fresh)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried dill
- Salt and pepper to taste
Instructions
- Scrub and clean the potatoes, then rub with olive oil.
- Air fry the potatoes at 400°F for 35-45 minutes until soft.
- Cool the potatoes for 20-30 minutes and slice in half lengthwise.
- Scoop out the inner flesh, leaving 1/4 inch along the sides.
- Drizzle or spray the insides with olive oil and season.
- Top with crumbled bacon and shredded cheddar cheese.
- Air fry again at 350°F for 6-10 minutes until cheese is melted.
- Garnish with green onions and drizzle ranch dressing before serving.
Notes
Choose medium-sized russet potatoes for even cooking.
Adjust cooking time based on potato size and quantity.
Experiment with different toppings like sour cream or jalapeños.
